Sesame Seafood Salad

So one of the simply amazing things about living in the tropics is how fresh and stunning the seafood is. I am telling you it is fantastic. I am talking so fresh. Smells like the sea, tastes like the sea and just mouth watering. Photos cannot do this amazing seafood the justice it deserves.
But I tried. I wanted to do something special and something just decadent with it. This is what I came up with and wow, it is so good.


Chopper my personal barman whipped up this lovely drink for me while I was cooking.
Melon Schnapps with Lemonade and a piece of a Tahitian lime. So refreshing.

Look at how lovely these bugs are. So sweet and juicy.



What you need for the salad.

  1. The flesh of 2 Mangoes diced pieces
  2. The flesh of 2 Avocados diced pieces
  3. 1 Hot Chilli seeded & chopped
  4. 2 Moreton Bay Bugs cleaned & chopped into bite sized pieces
  5. 500 grams of fresh cooked Prawns peeled and cut into bite sized pieces
  6. 1 scoop of roasted & salted Macadamias
  7. Juice of half a Tahitian Lime

For the dressing.

  1. Half a cup of good quality Olive Oil
  2. Quarter a cup of White Vinegar
  3. 1 tablespoon of Sesame Oil
  4. 1 tablespoon of Soy Sauce
  5. 2 tablespoons of White Sugar

Put all of the dressing ingredients into a microwave safe jug and place in the microwave for 30 seconds on high. Give it a good whisk and place in the fridge or freezer until it is ice cold. Give it a quick whisk just before adding to the salad ingredients. Mix desired amount of dressing with all the salad ingredients and serve. It's that easy. Serves 4 and your in heaven. I hope you enjoy it as much as we have :)

We have all had a look today and Kim says you have to stop with the teasing. All that beautiful seafood at your door. I am definitely making the seafood salad. Hope my seafood is as fresh
